No joke, this pie takes about 5 minutes to prepare...it's not too late!
Giant Butter Tart
1 unbaked pie shell (9")
3 eggs
1 c. brown sugar
1/4 c. butter
1 tsp. vanilla
1 c. raisins
1/2 c. chopped walnuts
Preheat oven to 375.
In bowl, beat eggs lightly. In another bowl mix sugar, butter and vanilla and beat until well blended and add to eggs. Stir in walnuts and raisins.
Pour into unbaked pie shell and bake for 40-50 minutes. Let cool on wire rack before serving.
{Variation: substitute walnuts and raisins with 1/2 c. of semi-sweet chocolate chips and 1/2 c. chopped pecans}

Edit: It is normal for the batter to look like a bunch of chunky goodness, including butter chunks...they will melt while cooking.
