I am a very luck girl for many reasons. One of them is that Josh makes this scrumptious breakfast for me on a fairly regular basis. He usually serves it with breakfast sausage, it's a match made in heaven.



Baked Apple Pancake:

2 tbsp. butter (unsalted)
1/4 c. sugar
3/4 tsp. ground cinnamnon
2 large apples (cored and sliced)
4 eggs
2/3 c. milk
1/3 c. flour
1/2 tsp. salt

Preheat over to 400.
Melt butter in large skillet with oven proof handle.

Combine 2 tbsp. sugar and cinnamon, sprinkle evenly over butter. Arrange apple slices over sugar mixture in pan. Cook over medium heat for 3-4 minutes. Remove from heat, and cool slightly.

Beat eggs, milk, flour, remaining sugar, and salt until smooth. Gently pour over apple slices. Bake pancake for approx. 15 minutes until golden

They just had a recipe of this (well a version)on Good Morning America this morning. I just need to get a pan that's oven safe and I'm ready to go.

I made this for my friend this morning. We were chatting while I was preparing and I totally forgot the FLOUR! Actually, it was still totally tasty. It was like an apple custard or flan. Next time I will try it with flour. : )
